The weather hasn't been prime sap weather lately, so last week we only collected 17.5 cups of sap over two days. This boiled down to 3/16 cup of syrup. Starting earlier in the year does mean that we have good days and bad days, but it also means that overall there will be more good days than if we had started later in the season.
week one: 79 cups of sap = some burned taffy and about 1/2 cup of syrup
week two: 17.5 cups of sap = 3/16 cup of syrup
total: 96.5 cups of sap (a smidge over 6 gallons) = some burned taffy and almost 3/4 cup of syrup
